It’s nearly fall in Ontario which means zucchinis are in season! Boy oh boy are they in season. So many colours, so many sizes, and so affordable! This recipe is the result of going to the farmer’s market and buying way to many zucchinis, and then trying to come up with recipes to use them all. This Zucchini Loaf with Chocolate Chips may not be your conventional zucchini recipe, but it may be your new favourite.
Our Zucchini Loaf is not just delicious, but it’s nice and light too. We like to think of it as a guilt-free dessert. There are greens in it after all! That is a win-win in our books.
When cooking this loaf, we recommend putting it in the oven for 50-60 minutes. Make sure to check it with a toothpick in the middle to make sure it comes out clean. Because of all the moisture from the zucchini, the cooking time may take a little bit longer. If you’re looking for a loaf that isn’t as sweet just leave out the chocolate chips. That said, we wouldn’t recommend this because we loveeee chocolate.

Zucchini Loaf with Chocolate Chips
Ingredients
- 1 medium Zucchini Grated (1 packed cup of zucchini)
- 2 1/2 cups All-Purpose Flour
- 2 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/4 tsp Salt
- 1 cup Sugar
- 1 tsp Lemon Juice
- 1 cup Almond Milk
- 1/2 cup Coconut Oil Melted
- 1/2 cup Apple Sauce
- 1 tsp Vanilla
- 1/3 cup Dark Chocolate Chopped (70% or darker)
Instructions

Preheat your oven to 350F.

Grease a 9x5 loaf pan.

In a large bowl, whisk together the flour, baking powder, baking soda and salt.

In a medium sized bowl combine the sugar, lemon juice, almond milk, coconut oil, applesauce and vanilla.

Slowly pour the wet ingredients into the dry ingredients, add in the grated zucchini and chocolate. Combine with a wooden spoon until well combined, ensuring not to over mix.

Pour mixture into the prepared loaf pan.

Place in preheated oven and bake for 50-60 minutes until a toothpick inserted into the middle comes out clean.

Allow the loaf to sit in the pan for 10 minutes and then remove and place on a cooling rack to cool before serving.
