Loaded Taco Fries

Ingredients

For the Taco Meat

  • 2 cups Textured Vegetable Protein (TVP)
  • 2 cups Water
  • 2 cups Vegetable Broth
  • 1/4 cup Soy Sauce
  • 2 tbsp Olive Oil
  • 1/4 cup Taco Seasoning

For the Loaded Fries

  • 1 package Curly Fries
  • 1 cup Shredded Cheddar Cheese Earth Island or Daiya
  • 1 Tomato Chopped
  • 1 cup Frozen Corn Thawed
  • 1 cup Lettuce Chopped
  • 3 Green Onions Chopped
  • 1/2 Avocado Chopped

Instructions

  1. Add the water and vegetable broth to a medium sized pot over medium-high heat and bring to a boil. Once boiling add in the TVP, stirring well for 3-5 minutes.

  2. Next, add in the oil, soy sauce and taco seasoning. Stir constantly for 3-5 minutes until the mixture comes to together and starts to resemble that of ground meat.Set aside.

  3. In a large skillet, Bake the fries according to the package.

  4. When there is 10 minutes left on the fries, remove skillet from the oven and add cooked TVP and cover generously in cheese.

  5. Continue to cook for the remaining 10 minutes. Keep in the oven until cheese is fully melted.

  6. Remove the skillet and cover fries with lettuce, tomato, green onions, and corn, and top with avocado.

  7. Serve immediately with salsa and sour cream.
