Bright Beet Soup

Ingredients

  • 1 Beets
  • 2 Yellow Potatoes
  • 1 tsp Garlic Minced
  • 1/2 tsp Cumin
  • 1/4 tsp Paprika
  • 1 tbsp Lemon Juice
  • 1 tsp Salt
  • Salt & Pepper To taste
  • 1 can Coconut Milk

Instructions

  1. Preheat oven to 425
  2. Peel and chop potatoes, place on stove and bring to a boil. Once boiled let simmer for 45 minutes
  3. While potatoes simmer, put beet in the oven on a tray for 45 minutes - leave the skins on
  4. Remove the beet from the oven, when cooler to the touch peel the beet and chop
  5. Place beet, potatoes, lemon juice, coconut milk, and spices in blender
  6. Blend to smooth, and enjoy!
