Our Sizzling Vegetable Skewers are a summertime staple around our households! Any time is the right time for these delicious skewers – from weeknight meals, to camping and cooking over the fire pit, to a weekend BBQ with friends our skewers are always a hit.
Coming together in 45 minutes from beginning to end they are so quick and so easy. We recommend marinating them for 30 minutes or longer, but in a pinch even 10 minutes would do. The longer they marinate the stronger the flavour, but even a quick dip in the marinade will make this meal tassssty!
We like to serve this meal with salad and our Garlic Hummus! In fact our Garlic Hummus is kind of a must for dipping… after all who eats kabobs without dipping them? It’s only the best part!

Sizzling Vegetable Skewers
- 1 Red Bell Pepper Chopped into large pieces
- 1 Yellow Bell Pepper Chopped into large pieces
- 1 Red Onion Chopped into large pieces
- 20 Cremini Mushrooms Halver
- 2 Zucchini Cut into 1/2 inch rounds
- 1 cup Vegetable Broth
- 1/4 cup Olive Oil
- 2 tbsp Lemon Juice
- 3 Cloves Garlic Peeled & crushed
- 1 tbsp Oregano
- 1 tsp Basil
- 1 tsp Thyme
- 1 tsp Salt
- Garlic Hummus To Serve
Place chopped veggies into a large container and set aside.
In a bowl combine the vegetable broth, olive oil, lemon juice, garlic, oregano and salt. Whisk together until fully combined and pour over the veggies.
Mix the veggies well until completely completely coated and place in the fridge for 30 minutes or longer (upto overnight).
Once they have completed marinating, skewer the veggies on kabob sticks (we prefer to use metal reusable ones). If you are using wooden skewer, ensure to soak them in water for 15 minutes prior to using them so they don’t burn on the BBQ.
Place kabobs on the BBQ over medium heat, and cook flipping halfway through until both sides are slightly browned.
Serve with hummus for dipping!
