Throwback to when Brigette and I first became friends, Pita Pizzas were the first meal we ever ate together! It was a nice spring day, Brigette was coming over for wine and dinner and she suggested we make pita pizzas. I wasn’t vegan at the time and she wasn’t vegetarian so our pizzas were the traditional pepperoni and cheese. We even got kinda fancy and BBQ’d the pizzas. After about 15 minutes of us trying to figure out how you turn on the bbq that is (two city living blondes after all). Fast forward to now, and I guess you could say this is our meal… so Brigette this post is for you!
Well the pepperoni and cheese days are long behind us, I have to say without a doubt this recipe is even better! The pesto and cashew parmesan cheeze are definitely what make this a winner in my books.
Not to mention, true to their name, these Quick and Easy Pita Pizzas couldn’t be any easier or quicker to make. While we don’t call for a BBQ in this recipe, the oven does the trick, if you try cooking these on your BBQ we’d love to hear what you think.
These Pita Pizzas can be made your own by changing up the ingredients. Try a tomato sauce, bbq sauce, curry sauce, chocolate sauce or whatever calls to you, as the base. I say get creative and live a little, I mean YOLO! (I promise I won’t ever say that again.)
Preheat oven to 425 F.
In a small pan over medium-high heat add the olive oil. When the oil is hot add the onion, sauteing until they are starting to become transparent. Set aside.
Lay pitas on 2 large baking sheets, so they are not overlapping.
Spread ⅛ cup of pesto on each pita, covering the bottom and leaving a small edge around the pita to act as crust.
On top of the pesto covered pitas place the tomatoes, mushrooms and sauteed onions.
Sprinkle the top with a generous amount of the parmesan.
Place in oven and bake for 10-15 minutes until the tomatoes are nicely cooked.
Remove from oven, cut each pita into 4 and serve.
As you can see in the picture we did an alternate version where we used pizza sauce, mozzarella cheeze shreds, bell pepper, onion and mushrooms. Feel free to play around and make these Pita Pizzas your own.
