Pesto is a delicious sauce made primarily of basil and garlic. It can be used to flavour things like pasta and sandwiches (like our Roasted Vegetable Sandwich!).
- 1/2 cup Olive Oil
- 1 cup Fresh Basil Packed
- 1/2 cup Unsalted Cashews
- 2 cloves Garlic Peeled & crushed
- 1/4 cup Nutritional Yeast
- 2 tsp Lemon Juice
- 1 tsp Salt
- Add olive oil, basil, cashews, garlic, nutritional yeast, lemon juice and salt to a blender or food processor. Blend on high until liquified.
- Taste and adjust salt and lemon juice as necessary.
*Keeps in the fridge for up to 3 days, however is best served fresh.
