No-Bake Granola

We love a good granola recipe but sometimes it feels like too much work with the baking and all, especially as summer gets closer. Who wants to turn the oven on when it’s hot out if you don’t have to? That’s why we decided to try and create a no-bake granola recipe, and we’re super stoked on this one! It reminds us of granola meets rice krispie squares and that is a solid combination! 

This recipe comes together in a quick 15 minutes, requiring only a microwave and your freezer. We recommend using a variety of seeds and nuts but feel free to make this your own. Add in coconut, chocolate chips or whatever you love in your favourite granola. 

Our No-Bake Granola is delicious served in a bowl with your favourite non-dairy milk and topped with fresh fruits or a quick fruit compote. Yummy!

Make sure to store the granola in the fridge to keep it firm.

No-Bake Granola

Prep Time 5 minutes
Cook Time 15 minutes
Servings 1 batch

Ingredients

  • 1/3 cup Maple Syrup
  • 1/3 cup Almond Butter
  • 2 1/2 cups Whole Grain Brown Rice Cereal (Can substitute regular rice cereal)
  • 1/2 cup Unsalted Roasted Almonds Chopped
  • 1/2 cup Unsalted Roasted Cashews Chopped
  • 2 tbsp Unsalted Roasted Sunflower Seeds
  • 2 tbsp Unsalted Roasted Pumpkin Seeds
  • 3 tbsp Hemp Hearts
  • 1/2 cup Dried Cranberries

For Serving

  • Non-Dairy Milk
  • Fresh Fruit

Instructions

  1. In a medium size bowl add the maple syrup and almond butter and mix together. Place in the microwave and microwave on high for 20 seconds. Remove from microwave, mix and microwave in 20 second increments until you are left with a slightly caramelized sauce. Ensure to mix in between and use a medium bowl as the mixture will bubble as it microwaves. Should take 4 to 6 rounds of microwave.

  2. In a large bowl add the whole grain brown rice cereal, almonds, cashews, sunflower seeds, pumpkin seeds, hemp hearts and cranberries and mix together.

  3. Pour the maple syrup and almond butter mixture into the bowl with the granola and mix well until fully incorporated.

  4. Place the bowl in the freezer for 10 minutes to allow the mixture to firm up slightly.

  5. Remove from the freezer and mix to break up slightly.

  6. Serve with almond milk topped with berries or use as you would granola.

  7. Keep stored in the fridge. Enjoy!
