Mmmm Mushroom Risotto! It’s the perfect meal for a cool fall or winter evening. Our Mushroom Risotto is a great weeknight meal that will leave you feeling warm and cozy. Plus, it comes together in 40 minutes and requires very little prep work. Win! We love risotto because it’s like a pasta and like a soup, so it feels like you’re eating 2 meals in one.
We are always looking for ways to sneak extra nutrients into meals without compromising taste. After all, the key to being a healthy vegan is making sure you’re getting enough nutrients! Hidden in our Mushroom Risotto are red lentils. Why lentils you may ask? Lentils are filled with lots of protein, fibre, and are great for digestion. Adding in red lentils has many nutritional benefits and adds a slightly peppery taste. We promise you won’t notice them! We chose red lentils because they break down easier (in case you were curious).

- 1 tbsp Olive Oil
- 1/2 White Onion Roughly chopped
- 1 pack Mushrooms Roughly chopped
- 3 cloves Garlic Peeled & crushed
- 8 cups Vegetable Broth
- 2 cups Arborio Rice Uncooked
- 2/3 cups Red Lentils Dried
- 1 tbsp White Wine Vinegar
- 1 tsp Salt
- 1 tsp Dried Parsley
- 1/4 cup Nutritional Yeast
- Cashew Parmesan Cheeze To top
Add oil to a large pan of medium-high heat.
To the pan add the onion and mushrooms, sauteing for 5 minutes until the onion begins to become translucent. Add in the garlic and saute for 1 additional minute.
To the pan add in the rice, vegetable broth, lentils, vinegar, salt, and parsley. Mix well and bring the pot to a boil.
Reduce heat and simmer the pasta for 25-30 minutes, until all of the liquid is completely absorbed.
Remove from heat and add in the nutritional yeast, mixing until fully incorporated.
Garnish with a generous sprinkle of our parmesan if desired.
