We are constantly eating. Literally, non-stop snacking all day long. Constantly. Obviously, it’s one of the benefits of living a vegan lifestyle. Snacking on veggies all day long is probably good for you! But as a result, every night when we make our lunches we need to think of all the snacks we need to pack. How many varieties of lunch snacks are there?? Energy Balls to the rescue!
One evening in Sigourney’s snack craze frustration, she came up with this brainchild – the peanut butter and oat, Chocolate Chunk Energy Balls! Not only are these bad boys actually so delicious, they are packed with nutrients and so filling! We pack 2 energy balls each, and 4 for the husbands. They keep us full all morning long.
These energy balls are great as a quick snack on-the-go, to pack on your next hiking trip, or even as an evening guilt-free snack. We bake a batch or two of these Sunday, place them in the fridge and they keep for up to a week.
Chocolate Chunk Energy Balls
- 1 cup Rolled Oats
- 8 Dates
- 1/4 cup Peanut Butter
- 2 tbsp Hemp Hearts
- 1/2 cup Almond Milk
- 1/4 cup Dark Chocolate Chopped
Place the rolled oats, dates, peanut butter, hemp hearts and milk into a high-speed blender, Blend until the dates and rolled oats have been broken down and you are left with a slightly chunky batter.
Using a wooden spoon mix in the dark chocolate until fully incorporated.
Shape the dough into 1 inch balls, place on a lined baking sheet and place in the fridge for 30 minutes allowing them to set and solidify.
